The Grand Marché in Fort-de-France, also called "covered market" or "spice market", is open from Monday to Saturday, 6AM to 4PM, and on Saturday from 6AM till 3PM. To go there, find Rue Isambert in Fort-de-France where you can park you car, and walk from there to the market.
